PORK IS ON THE WAY!

Our carts have been empty too long! End of August 2015 should end well with a variety of our delicious custom blended sausages, chops, loin roasts, bacon, boston butts, picnics and more! We have plenty of eggs in stock and have our eyes set on some beef this fall.

TRY THE CAJUN SAUSAGE!

Farmer Rich and I love the Cajun sausage! It's packed full of flavor with spices and pepper, although not "hot". We love it added to breakfast eggs or soup.

POTATO SOUP WITH CAJUN SAUSAGE
9 potatoes (peeled or unpeeled), sliced 1in cubes (2-3lbs)

6-8 cups chicken broth (really plan it and cook a whole chicken for dinner one night and make broth with carcass)

1/2 large onion peeled and chopped

celery, optional but we love it and I add about 4 stalks, chopped along with leaves. Especially leaves, I like the way it looks.

Garlic - as much or as little as you like (we like a lot)

1 pound of Cajun sausage, cooked - I leave it chunky and not crumble so much.

Add all of this to the slow cooker, adjust broth to cover the contents. Cook slow for 6-7 hours.
Add 1-2 tablespoons butter and 1 cup cream. You will want to adjust this to your liking for a creamy based soup. Heat thoroughly.
Garnish with chopped green onions and bacon - maybe in cheddar cheese!

Restock on Pork and Beef availability

Be sure to check out our pork! We have restocked on a variety of sausages, assorted chops and caul fat. Also, something new to check out is our Sweet & Spicy sausage. We have been working on some new flavors. This is a chorizo maple mix. If our regular chorizo is too spicy for you, then try the sweet & spicy.

With the last of the beef being bits and pieces, we figured it was a good time to tell you that we are hoping to bring more beef to you this fall. Maybe early November if we can. We appreciated your checking back with us and understanding.

Elim Springs Farm will offer beef, pork, chicken and egg products every other week to Fall Line Farms and Local Roots customers. We ask for your understanding as this is a very busy time and our labor is short at the moment.

Restock on meats!

We pick up more beef from the processor today and have hogs going in for more assorted chops, hams and sausages. Hope to update our inventory this evening 4/11.

Chicken is in pasture growing...be watching for assorted cuts and whole chickens by first week of May!

Ducks are back in action!

With the ground thawed and spring like conditions our ducks have kicked into action. Check our inventory early for eggs! Hopefully we will be adding some new girls to the flock, just trying to decide what breed. Thank you for your continued support.

Bacon and Sausage!

We have a fresh batch of bacon and sausage coming in this week! We are waiting on the bacon to finish brining then we can pick up and get these yummy fresh products listed. Our processor is working on getting "smoker" equipment, so hopefully in late spring we can offer smoked bacon and hams. We will restock on Sage, No sage, Maple, Mild Italian, Chorizo and I think a few "country style" mild and medium flavors. Thank you for supporting our farm and allowing us to feed you!
