Our Wood-Grown Shiitake Mushrooms are cultivated the traditional way – on white oak logs right here at Bibb Forest Farm. Unlike commercial indoor-grown varieties, these shiitakes grow slowly and absorb the rich nutrients of the oak, resulting in a firmer texture, deeper umami flavor, and better storage life.

We harvest these mushrooms fresh when conditions are just right, typically after a good rain and the perfect combo of temperature and humidity.
