This lovely wild herb grows alongside our lettuces in the spring, and is always welcome! Lamb's Quarters aka Fat Hen, aka White Goosefoot, is nutrient dense and provides iron, phosphorus, and calcium. It has a mild taste, similar to spinach, and can be eaten raw in a salad or cooked, just briefly as you would spinach.
