Sirloin Steak is cut from the top and bottom sirloin of the carcass. The sirloin tip is reserved for our sirloin tip roast cut. Bison Sirloin Steak is just a bit below the more tender prime cuts of bison steaks, but is also a better value than the other prime cut steaks. It is a good cut for a marinade. Our steaks are cut to 1 inch thickness.
