Herdress is an aged, washed-rind cheese. As it ripens, we bathe the wheels in a brine made with persimmons from Gail’s family farm in North Carolina. This technique coaxes out an earthy flavor with a hint of fruit and gives the rind a beautiful orange-gold hue. The texture is similar to that of Gouda.
