Sunchokes, aka Jerusalem Artichokes, a starchy tuber with a satisfying crunch and flavor resembling a water chesnut. They can be sliced raw into salads, make a delicious soup, roasted, sauteed in stir fry, fried, or fermented. We believe they make a quite delicious ferment especially when combined with carrots and apples. They tend to have a gaseous effect on certain individuals if eaten in generous quantities but we have found that if they are fermented, that effect is completely negated.
